Boxed chocolates being packed on the Amberwhisk sweet bench

How we pack a chocolate box without guessing the filling

Chocolate

Dark, milk, and white shells are filled in the back room, then packed in 9, 16, or 25 pieces with cocoa percentage on the lid. Nuts, dairy, and citrus sit on the allergen card, not in a footnote. We hold named boxes for same-week collection if you write before Thursday. Summer heat means a cooler pack. Amberwhisk sells what we tempered that week; we do not swap a caramel for coffee cream unless you ask.

Croissant dough laminated on the Amberwhisk pastry bench

Why the second croissant tray lands at eleven

Pastry

The first oven run leaves the racks before eight. By late morning the case is thin, so we bake a smaller second tray at eleven on weekdays. Saturday still gets an extra plain croissant run and nothing else, because almond dough does not scale safely in a rush. Write a day ahead if you need a dozen of one kind. Amberwhisk would rather sell a shorter list than put a nut pastry in a bag you did not ask for.

Layer cake with buttercream being finished in the Amberwhisk fridge room

Cake lead times, flavour cards, and what we will not bake

Cakes

A two-layer sponge usually needs three working days so the crumb can rest before we ice it. Stacked cakes need five. Flavour samples sit in the fridge on Fridays. We write names in chocolate or buttercream and we skip sculpted sugar figures. Children’s cakes stay alcohol-free. Write the date, guest count, and nut or dairy notes; Amberwhisk will confirm what the kitchen can actually finish that week.

Sourdough loaves on the cooling racks at Amberwhisk bakery

Two bread ovens, a half-price basket, and Monday rest

Bread

Sourdough, seed loaves, milk bread, and baguettes come out in two oven runs. We slice on request. Day-old loaves move to the half-price basket after three. Rye stays on a labelled shelf with a wheat card. Wholesale trays for nearby cafes are arranged by email, not during the morning queue. The kitchen rests on Monday with the starter. That calendar is why the afternoon loaf is still there after work.

Honey nougat and fruit jellies on the Amberwhisk candy counter

Nut-free jellies, nougat by weight, and party mixes

Candy

Hard candies, fruit jellies, toasted nougat, and honey caramels sit in jars with sugar notes on the lid. The nut-free jellies stay on a separate shelf. Nougat is cut to weight at the till. Ask for a mixed party bag if you do not want a single flavour. We do not describe candy as a health product. Colour comes from fruit and cocoa, and the card says so before you pay.

Seasonal gift tins packed with biscuits at Amberwhisk Confectionery

How a seasonal tin opens, sells, and then stops

Tins

Holiday tins, winter spice biscuits, and summer fruit tarts rotate through the year. We publish the next tin on this page about two weeks before it lands. Pre-orders close when the cocoa or butter for that run is used. A tin is a packed gift, not a subscription. If a flavour will not return the following month, we write that on the card instead of stretching a leftover tray overnight.
